Founded by the dynamic duo Valeri Pataridze and Irma Guliashvili, Ulevari Valley Winery was born from a desire to create high-quality natural wines using Georgian grape varieties, particularly Rkatsiteli and Saperavi. Ten years ago, Irma and Valeri made the decision to leave the fast-paced life of Tbilisi and return to their roots in Martkopi, where they could honor their grandparents’ winemaking traditions. Initially, they crafted wine for family celebrations and friends, but as word spread and demand grew, they were inspired to share their homemade creations with a wider audience. In 2021, they proudly bottled their first vintage, producing a total of 1,200 bottles—500 of which were amber wine made from Rkatsiteli grapes, and 700 bottles of red wine from the Saperavi grape. They also produce their own chacha, adding to the winery’s authentic offerings.
The name Ulevari is not only associated with the valley where the vineyards flourish; it also translates to “abundant” in Georgian. This name pays homage to the valley’s rich history, where numerous Persian invaders camped prior to the significant Battle of Martkopi in 1625. This battle was a pivotal moment in Georgian history, safeguarding the regions of Kartli and Kakheti against foreign invaders. Today, the vineyards thrive in this historically significant area, offering stunning views of the Yalno Ridge (1874 m above sea level), a medium-height latitudinal ridge within the Caucasus Mountain range. Ulevari Valley Winery Rkatsiteli is an amber wine crafted from the Rkatsiteli grape variety. To produce this unique wine, the family ferments and macerates the grape juice along with the skins, resulting in a balanced acidity and soft tannins. This harmonious wine pairs beautifully with cheese, vegetables, and fish, and is best enjoyed at a temperature of 14-15 °C.
Ulevari Valley Winery Saperavi is a natural red wine made from the Saperavi grape variety. This wine boasts a dark ruby color and a velvety, harmonious taste that complements dishes such as mutton, cheese, and vegetables. It is best served at 14-16 °C.
